Warm over rice pudding, cold with quark and muesli, or as a sweet side dish for pancakes – this apple compote is prepared in just a few minutes and tastes like pure breakfast bliss.
Ingredients
- 1 kg apples (e.g. Elstar or Boskop)
- 150 g sugar (adjust to taste)
- 2 cl lemon juice
- a splash of water (just a little, for cooking)

How to make it
Prepare apples
Peel the apples, remove the core, and cut them into small pieces.
Into the pot
Place the apple pieces in a pot. Add sugar, lemon juice, and a small splash of water.
Bring to a boil
Cook over medium heat until the apples soften. It should cook quickly – not too long, so the pieces don’t fall apart.
Remove from heat
Once the apples are soft, remove the pot from the heat and let the compote cool briefly.
Let cool & serve
Then let it cool completely before serving – it can also be served warm, of course.
Tips & variations
If you prefer a rounder flavor, add a pinch of cinnamon or a split vanilla pod to the pot at the beginning; it will be fresher with orange juice instead of water. For more bite, slightly reduce the cooking time; for a creamier compote, mash a few pieces at the end. The apple compote keeps for 2–3 days in the refrigerator and freezes wonderfully – perfect as a stock for spontaneous breakfast moments.
